After a rather relaxing Sunday, I was ready for Monday to happen. Weird, right?
Supper was very successful (as suspected) with Coconut Qunioa patties and Mango Salsa from Ashley at edible perspective. Sadly, when I went to make the recipe I did not have enough coconut (recipe asked for 1.5 cups and I had maybe 1 cup) so I used what I had and subbed the quinoa flour out and coconut flour in. They still had more than enough coconut taste. Problem #2 – a VERY sad mango, that was brown 🙁 I was not going to the store to buy a new one and decided the other salsa ingredients would take over, and they did. Next time I will have a good mango for this recipe!
With very little on TV right now we rented The Muppets to watch last night. It was cute, but I am not sure I ever watched it as a kid!? Maybe my Mom can help me out here…
Lunch today was coconut filled, and probably one of the best lunches I have had in awhile. Enter a base layer of spinach, a Coconut Quinoa patty, Mango Salsa topped with a mixture of plain Greek yogurt, lemon zest and honey, and voila you have on delicious salad! Now for the side – I had leftover (canned) light coconut milk in the fridge and decided I had to use it before it went bad, so into the Vitamix went 1 cup of light coconut milk, ½ frozen banana and a scoop of chocolate Vega protein powder. I poured it into a bowl since it was on the thicker side I am not allowed to use straws right now (dental work) and after one bite I was in love (seriously), and knew exactly what it tasted like – a Wendy’s Frosty! Do you remember these as a kid? I loved them! And just the other night when we stopped at DQ, I saw Wendy’s next door and started to second guess my Blizzard choice… Not now though, this is way tastier, creamier and healthier! I actually think I will start to always have light coconut milk in the pantry for this quick treat this summer. Imagine the toppings – crumbled Oreos, cookies, fruit, coconut, chocolate chips! It may not be healthy then though but still better than a actual Frosty I’d guess 😉
Healthy “Frosty” – For one
½ frozen banana
1 scoop chocolate protein powder
1 cup light canned coconut milk
Serve in a bowl or glass with a straw, but it is thick so I recommend the bowl. Eat with toppings, or on its own!
After a rather quick work day we hit the gym. Monday is usually a rest night or home workout night for us, but with a few busy evenings this week we decided to better go tonight. Tonight’s agenda, 30 minutes on the elliptical then this core/ab workout:
Tonight, we had “brinner” – breakfast for dinner!
On pumpernickel bread (my favorite bread in case anyone ever wants to bake me some…), with egg, turkey bacon, Monterey Jack cheese, avocado, and tomato with a side salad for get my greens in for the day! I think I might make this same sandwich for lunch tomorrow. Soo good!
I have some blog homework to do tonight, I am starting a (slow) re-haul of my blog and need to start getting ideas and elements together so I am off to check out other blogs and templates – this is actually super exciting and fun to me!

It is not even a competition for me – BREAKFAST! One day I plan to eat it for all 3 meals of the day. I used to love when my Mom made breakfast for dinner – usually it was French toast I believe…
