This might be my most delicious post yet 😉 A few weeks back I was contact that Love With Food was coming to Canada. I had never heard of them before but was very intrigued. The concept is quite simple, it is a snack box subscription AND they donate a portion of their proceeds to Canadian food banks to help families in need.

All the snacks are organic or all-natural, GMO free, gluten free or free of artificial “junk”. Lately we have found that Avery has not so fun “reactions” to artificial dyes in foods so the fact that all these snacks are free of those are perfect for us!

Look who is blogging a recipe?! I made this muffins one rainy day last week and upon first bite knew I had to share the recipe. In typical Lindsey fashion I find a recipe, look at it and then do my own thing. Luckily these turned out way better than I imagined! So as soon the girls went for their naps I snapped some photos and got the recipe blogged. Priorities people, what grocery list?
Coconut Banana Muffins – Makes 12 muffins
1 1/4 cups whole wheat pastry flour
1t baking powder
2 medium ripe bananas – mashed
1/3 cup cane sugar
1/2 cup coconut oil — softened
1 cup unsweetened shredded coconut
1/2 chocolate chips
Pre-heat over to 350, put muffins liners in muffin tin. In a stand mixer add bananas, vanilla, egg, coconut oil and mix well. Add in dry ingredients, flour, salt and baking powder, mix until combined. Add in 3/4 cup coconut and chocolate chips and mix to combine.
Put the mixture into the muffin liners and add remaining 1/4 cup of coconut to the tops of the muffins. Bake for 22 minutes, let cool for 5 minutes and moving to cooling rack.
Now get to your kitchens and make these, you will not regret it!
Happy Thursday everyone! I am trying to fit in some random/daily life posts now that I am home and my days are slightly more exciting than being at work all day so here we go, three things on this Thursday:
1- I forgot how much time you spend on the couch nursing a baby. I added up my time from one day and it was almost 4 hours out of 24 hours! I joke my butt hurts from sitting so much! haha. After nursing we always cuddle and burp. Chloe needs to be burped a few times, whereas Avery never burped! This means lots of couch selfies 😉
2 – I will talk more about this in another post but this week my hunger woke up and I am starving 24/7. I do not mind this one bit (I love food!) but need to make better choices when I am snacking around the clock. Part of my plan is having healthy, homemade snacks on hand. On Monday I made homemade granola and protein balls.
3 – Thank you for all the compliments on how well I am doing with two little ones. I have to say though we still have rough moments – example most suppers are spent trying to get Avery to sit and EAT which usually ends in her not eating (what happened to our great eater?) and this is also Chloe’s grumpy time so she is fussy as well. Oy. Good thing there is wine and beer. But in all seriousness we are doing great even with these moments and I know everything in a phase. I also have a ton of help from Chad and my Mom (on her days off) and one other small secret weapon – placenta pills.
