Foodie Friday

What a week! I am barely awake right now after a whirlwind (but fun!) week.

Monday was voting day! We walked over after work and got our vote on, Avery was pretty excited with the process since we knew someone running for council.

Wednesday I had my biggest work event of the year. Chloe thought a nap at 7:30am was a good idea so I let her nap then went to work a bit late since ti was a long day for me – I got home at 11pm. My tired brain clearly was not working when I set my alarm for pm not am and slept in the next day.

Thursday was a long day and after battling a sore throat for weeks I went to the doctor. Turns out it is okay but he did prescribe me a couple days off work haha. I must’ve looked extra tired 😉

Switching gears to meal planning. Comments on last week’s meals – crockpot chicken & dumplings? Major fail – I think the dumplings need to be in the whole time. The winner from last week would be the lettuce wraps.

This week I decided to do something different and have a meat free week! Lets see if Chad notices 😉

Saturday – Roasted Veggie Fajitas

Sunday – Roasted Red Pepper Pasta (Crazy Vegan Kitchen) & roasted broccoli

Monday – Black Bean burgers & sweet potato fries

Tuesday – Spinach, Tomato & Feta Frittata – Simply Recipes

Wednesday – One Pot Mexican Rice Casserole – Damn Delicious

Thursday – Spicy Thai Noodles – Life Made Simple

Friday – Roasted Chickpea Gyros – – Live Eat Learn

We actually have no weekend plans right now! I want to finish up my dresser and just have a quiet weekend 🙂
